I’ve long been fascinated with the idea of “Molecular Gastronomy” and have admired Omar Cantu’s revolutionary restaurant Moto in Chicago for 3 or 4 years now…haven’t made it there, yet. If you haven’t seen it, check out “Future Food” on Planet Green. Fascinating show where Cantu and his band of chemists/cooks do cool experiments with food. Why Planet Green? Cantu is obsessed with ending world hunger and “shortening the food chain”. Check out the episodes about “Miracle Fruit” and “Burger Wars”. Amazing.
