Growing up near Chattanooga I have a life-long love for the Krystal burger. So, naturally I have been a huge fan of many upscale restaurants, or gastropubs if you will, featuring sliders on their menu. The flip side (no pun intended) is that during the same time the Food Network has taught us that we need all manner of useless unitaskers, the most ridiculous of which has to be those stupid slider molds that you can find anywhere from Walmart to Williams Sonoma. Really, are we that pathetic? I make sliders frequently at home. You can use any ground meat from beef chuck to ground lamb. All you need is a sheet pan and some aluminum foil and these suckers can be on the grill in less than 10 minutes.
Foil a sheet pan. Sprinkle with seasonings. Plop meat on sheet lined with foil, pork seen here.
Mash meat flat with hands.
Remove from pan and separate into patties using a thin spatula or pizza cutter. I use a fish turner style spatula. Grill on medium high for about 2 minutes per side, melting cheese as second side cooks. Grill rolls for no more than 30 seconds. Top with your favorite condiments (pickles and mustard).
