Merry Christmas from BDE!

To all three of you who read/write this, Merry Christmas from Music City!
I experimented with the turkey sous vide, and it worked great, will post soon.
Tonight’s menu:

Herb salad with dates, blood oranges, pecans, and citrus vinaigrette
Pommes Dauphinoise (from Bourdain’s Les Halles book) with horseradish cream sauce
Beef tenderloin with reduction sauce (Perigeux)
Sauteed chantarelle mushrooms with onions and carrots
Chocolate cake

  1. Not glamourous, but excellent…collards cooked in a ham hock broth, pinto beans slow cooked in a Dutch oven, cornbread. No recipes, all delish! Later went to Newman’s and cooked the fois. Stores closed, so had to make my own baguette…so tasty. Merry Christmas.

  2. We had Laura’s family over for a midday dinner, so I cooked a whole beef tenderloin, potatoes, and green beans. I rubbed the loin with salt, peppercorns, and fresh rosemary that were ground in the spice grinder, then minced garlic and rubbed it on. It sat in the fridge all day, then I then grilled the loin for a few minutes on all sides, and tossed it into the oven till it was medium rare. The potatoes were tossed with olive oil and herbs and roasted. The green beans were blanched and tossed with tomatoes, basil, white wine, shallots, and garlic, and topped with a generous grating of parmesan.
