More ethnic fare during Lent. Lots of veggies here. Salsa is a grilled tomato salsa prepared in a mocajete (?sp). The main taco ingredients are grilled portabello mushroom caps that have marinated in a puree of onion, garlic, cumin, lime juice, and cilantro. Garnish includes roasted poblano strips or rajas, the salsa, and queso fresco.
To follow on OGs post on warming corm tortillas, my favorite is on an extremely hot grill. The slight char is unparalled in my opinion. This was a vegetarian feast…with the addition of some cold Pacifico, this could hardly be viewed as a sacrifice.
