Big Dawg Eats Bistro

Homework for the BDE bloggers.  OG, MAB, myself and anyone else out there.  I thought it would be fun to make a menu out of our favorite dishes for the BDE Bistro (if such a place existed).  The idea is to either use recipes/posts from this blog or dishes you’ve prepared to create a menu for your restaurant.  Let’s see what we can come up with before the end of the month.  It will be a bit of a challenge to make a cohesive menu given the eccentricities of the bloggers, but let’s each see what we can do.

  1. Not much different than planning dinner for friends or family. Here’s my first entry, and I’ll probably have more:

    At this time of the year, it’s really a transitional point. The air is cool at night, and it still gets pretty warm during the day. The farmer’s market is on the verge of explosion with autumn goodies, and we regrettably say goodbye to some of the jewels of summer like cukes, tomatoes, herbs, corn, etc. It’s also getting into soup and stew weather from time to time, and the grill is still running strong.

    Two menus then:

    green salad with crispy fried shallots and bacon/smoked paprika/sherry vinaigrette
    baguette rounds with salami, aged manchego, and quince paste
    Kamado grilled tarragon chicken
    summer veggie sautee with tabasco sauce (squash, tomato, herbs)
    fresh sliced tomato with olive oil and fleur de sel
    Jenny’s salt caramel ice cream

    We’ve had variations of this one all summer, and have loved it. It really can’t miss and has been our go to recipe at least a couple of nights a week. Granted we don’t do the whole production, but the salad and the chicken are definitely there a lot.

    green salad with red wine vinaigrette
    assorted cheeses (robust, taleggio, parm reggiano)
    pan fried hanger steaks with pan reduction sauce
    roasted root vegetables (parsnip, heirloom carrot, beets)
    sauteed onion and mushrooms
    assorted ice cream/gelato
