more stuffed ancho peppers

If you want to know where to start on reducing meat in your diet, try Mexican food. Stuffing peppers with bean mixtures and topping with cheese is easy. Here’s one where we took vegetarian black bean chili, made sure it had proper thickness, and then stuffed it into our charred/peeled ancho peppers. To make the chili, I took a standard tomato sauce (see tomato progression), added cumin, smoked paprika, and caramelized onions to which I added a can of black beans. When it was a little too watery, I just smashed the beans to release some starch to thicken it.

Sprinkled with a little cheese, two with sriracha for the pepper heads, two without.

Broil until the cheese is melted and a little bit browned.
