Will try and perfect this new classic while watermelons are “in-season”. Pictured is a watermelon + feta salad dressed with a mint + serrano vinaigrette. Very tasty. Issue with first go round is inappropriate watermelon:feta ratio. I think the watermelon slices could be twice the size. Also, I went wimpy on the heat, but this combo would definitely benefit from a bit more. The next permutation may be round watermelon disks with whole mint leaves and some homemade buttermilk cheese balls to approximate a “redneck caprese”.
