Figs are hard to miss this time of year. The squirrels seem to have a sixth sense in my yard immediately before they should be picked. Luckily i found a vacant lot with a huge turkey fig tree where I “borrowed” a couple pounds of figs.  And I made fig syrup.  It’ll make ur tongue slap ur brains out.

1 pound fresh figs sliced
3/4 cup sugar
1 whole vanilla bean split
1/2 cup oloroso sherry
1/2 cup dark rum
1 1/2 cup water

Combine all ingredients. In a saucepan.  Bring to a boil and maintain for 3 minutes then reduce to medium for 30 minutes.  Use an immersion circulator to bring the syrup together.  Place the saucepan on simmer for another hour then strain through a fine mesh China cap.  Use on ice cream or rich fowl.
