Instant roux

Why I didn’t think of it sooner I don’t know.

2 tbsp of butter. Melt in the microwave for 30 seconds.
Add 2 tbsp of flour, microwave for another minute.
Stir and done.

  1. Wondra flour is also a fabulous thickener. It’s already cooked and dried. Is very fine and will whisk into any manner of liquid and thicken as a roux when heated to a simmer.
