I really think boiling destroys this if you’re not careful. Instead, cut the pieces small, put them on skewers and grill. Not everyone has a huge pot and outdoor propane burner. In this case we used andouille sausage, corn, red and yellow peppers, and preboiled potatoes. Toss in some oil and salt, grill on high until you get a little char but nothing burns.
If you serving for a party, keep it in a warming oven until you’re ready to serve, pull everything off the skewers, and put on a big platter. Serve with side dishes of cocktail sauce or a creamy horseradish. Oh, and beer. Lots of beer.
