Because that’s what they are. Cook on a sheet pan turned on their sides at 450 until the marrow browns, about 15-20 min. Serve on a plate with a small spoon, toasted baguette rounds, coarse salt, mustard (maybe) and some gherkins or cornichons. Smear it on the toasts and sprinkle with salt.
